    Stuffed Armadillo?s
    (Aka Stuffed Flank Steak)

    When my kid?s where little I made these Steaks and always told them that they where stuffed Armadillos because how they puffed up like the real ones. I know I know mean *L* but today they are 24 and 22 and still call them this. I will be adding occasionally recipes on things I teased my kids with. Hehehhe.

    1 ?-2 lbs lbs of Flank Steak medium to thick cut, pounded with a tenderizer on both sides and cut in half horizontally (to make two steaks)

    1 small chopped onion

    1 teaspoon garlic powder

    ? teaspoon salt

    ? teaspoon pepper

    1 box stove top stuffing mix made according to directions.

    Heat oven to 350. Grease 9x13 pan lightly or use non stick spray. Pound steak on both sides with a
    Tenderizer. Cut in two pieces horizontally to make two separate steaks. Make stuffing according to
    Package directions. Add in onion, garlic powder, salt and pepper. Lay the steak out horizontally, take
    Half of the stuffing and place over the steak, like icing a cake. Repeat with the other steak. Roll up the steak starting at the end. Tuck in the bottom flap and place in greased pan. Repeat with the other
    Steak. After the steaks are in the pan use a knife and cut 2? apart. first horizontally then vertical to make a pattern on the steak. This will look like cubes. You also can tie the meat instead of cutting. Cover with foil for ? hour then uncover and bake another 15 min. These puff up making the aka Armadillos. *L* Makes 8 servings.

    Cake Mix Cookies

    2 boxes of "Pudding in the Mix" cake mix
    (any flavor)
    2/3 cup melted butter
    2 eggs
    12 oz. bag chocolate chips or heath bits
    1/4 cup water

    Mix all ingredients together. Drop by tablespooon on ungreased cookie sheet. Bake for 8-10 minutes at 375 degrees.

    Homemade Kahlua

    3 cups sugar
    3 cups water
    4-5 Tablespoons instant coffee
    2 qts of vodka
    3 Tablespoons of pure vanilla

    Mix sugar, water, coffee together and bring to slow boil. Turn heat down and simmer 1 hour. Remove heat, cover liquid with plastic wrap. Let sit for 12 hours, then remove wrap (it will pick up film from the top). Add vodka and vanilla, stir well. Bottle in dark bottles.

    Drinkable immediately. Makes aprox 2 qts.

    My favorite desert is Pineapple Upside down cake, I found this simple & EZ recipe, that tastes just like the cake. This is also a good recipe to let kids help with.
    ***Pineapple Upside Down Biscuit***

    1/4 stick of butter
    1 cup (Compacted) brown sugar
    1 can of Crushed Pinapple (well drained)
    1 can of biscuits

    Mix butter, sugar, pineapple
    place spoonful of mixture into muffin pan
    Place biscuit onto mixture
    put into pre-heated over per biscuit instruction

    *to avoid burning your muffin pan add a bit of water to any unused spots*

    *I found this to work better for regular biscuits than the flakey or layered biscuits*

    Quick Quiche

    1 thawed pie shell
    1 tbsp. of Dijon mustard
    Black forest ham (as much as you desire)
    ? onion, chopped
    Broccoli (as much as you desire)
    Sprinkle of dill
    1 cup of Asiago cheese
    3 eggs
    1 cup of milk
    Shredded cheddar cheese and
    Salt and pepper


    Take the thawed pie shell and spread the shell with the 1 tbsp. of
    Dijon mustard.

    Lay the pieces of black forest ham on the bottom of the shell.

    Fry the 1/2 chopped onion in butter adding the cooked broccoli when
    the onion turns soft.

    Add a sprinkle of dill, 1 cup of Asiago cheese to the onion and
    broccoli mixture, stir and spread on top of the ham in the shell.

    Mix the 3 eggs with the 1 cup of milk, sprinkle some salt and pepper
    and mix well.

    Pour over the broccoli and onion mixture and sprinkle the shredded
    cheddar cheese over top.

    Bake for 35 - 45 minutes or until set at 350 degrees.

    Angel Berry Trifle

    1-1/2 cups cold fat-free milk
    1 package (1 ounce) sugar-free instant vanilla pudding mix
    1 cup (8 ounces) fat-free vanilla yogurt
    6 ounces reduced-fat cream cheese, cubed
    1/2 cup reduced-fat sour cream
    2 teaspoons vanilla extract
    1 carton (12 ounces)frozen reduced-fat whipped topping, thawed, divided
    1 prepared angel food cake (18 inches) , cut into 1-inch cubes
    1 pint each blackberries, raspberries and blueberries

    In a small bowl, whisk the milk and pudding mix for 2 minutes or until thickened. In a
    mixing bowl, beat the yogurt, cream cheese, sour cream and vanilla until smooth. Fold in
    pudding mixture and 1 cup whipped topping. Place a third of the cake cubes in a 4-qt.
    trifle bowl. Top with a third of the pudding mixture, a third of the berries and half of
    the remaining whipped topping. Repeat layers once. Top with remaining cake, pudding and
    berries. Serve immediately or refrigerate.

    Yield: 14 servings.

    For that cookout or camping trip (my kids favorite)

    Banana Split Sundae

    1 banana
    1/8 cup chocolate chips
    1/8 cup of miniture marshmallows
    1/8 c peanuts, chopped nuts
    1 canned pineapple ring

    Serves 1

    Do not peel banana. Slice lengthwise half-way through, spread open and sprinkle chocolate chips,pineapple, mini-marshmallows & nuts into the banana. Wrap with heavy Reynolds Wrap and toss into your fire pit embers for about 10 minutes (approximately). Remove and open carefully, treat yourself with whipped cream, close your eyes and you will think you are eating a real banana split! Enjoy. [img]graemlins/dish.gif[/img]

    My youngest lil man, Jordan, made us this recipe
    he learned in home education this year! They are
    so good but I have no clue what they are called!

    pita pocket bread
    1/4 cup butter
    1 pack dry ranch dressing

    Slice the pita pocket open so you have 2 rounds.
    Cut each one into quarters and lay on baking
    sheet.
    Mix butter with ranch dressing and spread on
    each quarter of pita bread. Bake 5-10 min @ 350 degrees
    or until browned the way you want them.
